A dash of this, a splash of that, then heat
the pan, read again recipe of mum –
quantity and quality, how it’s done –
would she be pleased with change of fish for meat?
Worse still (you can picture the horror) meat
itself withdrawn for vegetarian
palate: greens, reds, and other hues of sun-
ripened produce brought to flavour by heat.
As long as there’s a grating of dairy,
you know she wouldn’t mind, this offering
placating, adding depth of taste (airy,
too, the creamy sauce); your change apt. Marry,
you think, these together for best serving
of a recipe ever family.
